Chicken Yakitori:
A modified Japanese dish.
Ingredients:
3 lbs. chicken thighs and drumsticks
1/3 cup dry sherry wine
1/3 cup-soy sauce,
1 clove minced garlic (more if you love garlic),
1 1/2 tsp. chopped ginger
6 scallions cut into 1/2" length (more if you love scallions)
3 Tbs. sesame oil
Procedure:
Place all the ingredients in a large shallow roasting pan.
Cover the pan with aluminum foil, and marinade for 8 hours, or overnight.
After marinading, turn the oven on and bake at 375 degrees for an hour.
Then separate the meat and the liquid;
broil the meat for 5 minutes on each sides.
(Broiling is optional).
Gravy:
Boil and reduce the liquid separately in a pot.
Serve with boiled jasmine, or plain rice.
