Adobo:
A Filipino Classic - widely considered
as the Filipino national dish :-)
Ingredients:
3 lbs. skinless chicken breast, cut into serving pieces
2 lbs of pork ribs or chops, or skinless chicken drumsticks
(Pork is optional; you can use all chicken)
1 cup-soy sauce,
5 cloves crushed garlic (more if you love garlic),
3/4 cup- vinegar,
2-bay leaves
1 Tablespoon crushed peppercorns
2 potatoes-sliced into 1/2" pieces
Procedure:
Place all the ingredients in a large shallow roasting pan, except the potatoes.
Cover the pan with aluminum foil, and marinade for 2 hours.
After marinading, turn the oven on, and bake at 350 degrees for an hour and a half.
Remove from the oven, and then separate the meat from the liquid.
Broil, to brown the meat, for 10 min - 5 minutes on each side.
Gravy:
Boil the liquid separately in a pot;
Add potatoes, then, cover and reduce heat to a simmer.
Cook for another 35 minutes.
Mix the broiled meat and the gravy.
Serve with boiled jasmine, or plain rice.
